Ingredients

  • 1 medium green cabbage (about 2 lbs)
  • 1 tbsp fine sea salt (non-iodized)
  • 1 tsp caraway seeds (optional)
  • A clean wide-mouth jar

How to make it

  1. Remove and reserve one outer cabbage leaf, then thinly shred the rest.
  2. In a large bowl, toss the shredded cabbage with the salt and massage firmly for 5–10 minutes until it releases plenty of liquid.
  3. Mix in the caraway seeds, then pack the cabbage tightly into the jar, pressing down so the brine rises above it.
  4. Fold the reserved leaf on top to keep everything submerged, and weigh it down with a small clean jar or a brine-filled bag.
  5. Cover loosely and leave at cool room temperature 1–4 weeks, tasting every few days until it is as tangy as you like.
  6. When it tastes right, seal and refrigerate; it keeps for months.
